Costa Rica Roger Solis -La Casona

Farm Description

La Casona is the farm and micro-mill of Roger Solis, located in the Talamanca Sierra highlands, city of San Marcos. This particular lot is what they refer to as "white honey", which unlike a full honey coffee, is much closer to a fully washed coffee. The mechanical demucilager machines are adjusted to retain only the thinnest of layers of fruit on seed, and the resulting coffee can have much cleaner finish, and clearer acidity than many of the full honey coffees. La Casona is planted in Catuai and Caturra cultivars, and this lot is a mix of both. Peaks in the area reach as high as 3000 meters, and Dón Solis farms range from 1750 to 1900 meters above sea level (we sold his "1900" lot earler in the year). It's an ideal micro-region and climate for growing coffee with rich volcanic soil, great altitude, and is shaded from the hot afternoon suns by mountain peaks.

Cupping Notes

The dry fragrance has a smells of buttery caramel and roasted nut, smells that recall butter-nut ice cream. The wet aroma has a sweet tea element, along with the dark caramel sensed in the ground coffee, and laced with a thread of clove spice powder. La Casona is a fruited, sweet cup, faring best between City to Full City for brewed coffee. At City/City+, acidity cuts through with an apple juice-like/malic vibrance. The butter toffee/caramel aspects found in aroma show well in the cup too, creating a nice sweet platform for the somewhat muted top notes to stand out against. As you move through the cup, fruited tea notes come into view, like orange and mango teas. Top notes are delicate, and are pushed far to the background when roasted to Full City and beyond (if not gone altogether). Bittersweet chocolate flavors dominate the cup at darker roast levels, and La Casona shows promise for use as single origin espresso, though I did not try myself (I'll do my best to roast specifically for espresso soon and report back). All in all a clean Costa cup at a wide roast range, versatile both in roast and brew applications.
