Darren Smith from Sumas Mountain Coffee Co. and I have been exchanging some thoughts about roast levels, roast logs, and one of the shrub coffees that he recently picked up from us. We thought it'd be golden to share some of this ongoing conversation with you. Darren was kind enough to send me his roast of the Colombia Cauca - Portilla-Camayo that we recently had up.

Here are my notes on the roast.

Fragrance: toast, cocoa, graham

Aroma: toast, rum, cocoa

Talk about talk about it talk about it talk about Roasting - Christopher Oppenhuis

I've mentioned it a lot of times already I know, but I really can't say enough how awesome the roaster scene is in Chicago right now. Not just because there's a lot of folks doing quality work, but also because there's a lot of folks doing really unique work and most importantly that there seems to be a real sense of community and support throughout the scene. Seriously folks, you should definitely be watching what's going on in Chi.

Northbound Through the Andes. Again.

OK, so I'm finally back in the Bay after two intense weeks trekking through the Peruvian and Colombian Andes. This particular trip was non-stop from start to finish with many a flight and long car ride filling big chunks of virtually every day. After arriving in Lima late my first night, we woke up the following morning and sped off across the Peruvian Altiplano to Chanchamayo for the coffee and cacao conference where I was to present a lecture to cooperative based farmers from across the country.

I was looking around for something to throw in the Probat to warm it up for an espresso roasting session and I decided to give the http://www.coffeeshrub.com/shrub/coffee/colombia-peaberry-los-caracoles-... a whirl. Thing is I got distracted and ended up roasting it to a Roasted Coffee Pictorial Guide. ">Full City+ level instead of the City+ I was aiming for...so you know what I thought: SO espresso Friday! I mostly roast blends here at the warehouse but am getting more into Single Origin espresso and this is my new favorite.
